Vegan Strawberry Ice Cream
In my former life of sugar addiction, my favorite food was ice cream! I walked away from it 29 years ago, and never returned, BUT found healthier alternatives !!
This recipe is quick and easy, and ready to eat on the spot.
In fact, below are listed 3 versions of how to make delicious, healthy, and quick strawberry ice cream.
Vegan Strawberry Ice Cream Recipe
Equipment Needed: High Speed Blender
Yield: 2 Servings, unless you are like me, and eat the whole thing by yourself
Ingredients:
- 3/4 cup almond or coconut milk
- 1/2 avocado
- Several frozen organic strawberries (begin with 3-4, blend and taste … if more desired add more)
- 1-2 tablespoons of date paste, or 1 or 2 dates*
Note: if you are a client of mine and going through your Break UP with Sugar transition period, omit dates, and eat as is, or add a few drops of stevia or a tablespoon of monk fruit granules.
Preparation Steps:
- Place in high speed blender (such as a Vitamix), almond milk, frozen strawberries, avocado and optional sweetener.
- Blend using variable control dial … until you get a vortex.
- Ready to serve and enjoy!
Note for Coconut Lovers: Pour in bowl, and add unsweetened shredded coconut and mix in.
Vanilla Strawberry Ice Cream Recipe
Equipment Needed: High Speed Blender
Yield: 2 Servings, unless you are like me and eat the whole thing by yourself
Ingredients:
- 3/4 cup almond or coconut milk
- 1/2 avocado
- 1 scoop of protein powder
- Several frozen organic strawberries (begin with 3-4, blend and taste … if more desired add more)
- 1-2 tablespoons of date paste, or 1 or 2 dates*

- 1-2 tablespoons of date paste, or 1 or 2 dates*
- Optional: 1 scoop of protein powder
