Vegan Mash Potatoes and Gravy without Potatoes
Vegan mash potatoes and gravy recipe is simple, quick and fun to make. Looks like the mash potatoes and gravy gramma use to make, but this recipe is raw and has a completely different taste.
Mashed boiled potatoes have been found in recipe books dating back to the 1700’s. I’m pretty sure the chefs of that day never imagined the versions we’d be making today!

Vegan Mash Potatoes and Gravy Recipe
Equipment Needed: High Speed Blender
Yield: approximately 2 cups
Ingredients:
Mash Potatoes:
- 1 cup chopped peeled zucchini
- 1 cup raw cashews, soaked for 40 minutes
- 1 cup chopped cauliflower
- 1/2 clove of garlic
Gravy:
- 2 tablespoons olive or flax seed oil
- 1 tablespoon nutritional yeast
- Pinch of Himalayan salt and black pepper
Garnish: fresh chives, finely chopped rosemary, thyme or basil
Preparation Steps:
1. Using a high speed blend, blend zucchini, cauliflower, cashews, and garlic (use slow speed and slightly increase, and use spatula to feather ingredients into vortex)
2. For gravy, whisk in small bowl gravy ingredients
3. Spoon mash potatoes onto plate, drizzle gravy and sprinkle garnish – and serve.
