Tangy, Almond Butter Dressing
Being a huge fan of eating a huge salad every day, I am always testing out new combinations to create another tasty salad dressing. Almond butter may seem like an odd ingredient for a salad dressing, but actually it a creaminess, as well as flavor to this tangy recipe.
Almond Butter Salad Dressing Recipe:
Equipment Needed: None required, unless you wanted to mix it in a Vitamix.
Yield: 1/2 cup
- 3 tablespoons water
- 3 tablespoons olive oil
- 1 tablespoon light miso (information on miso)
- 1 tablespoon raw almond butter (my favorite for nut butters – Artisana)
- 1 tablespoon date paste (or one large medjool date – but will need Vitamix to mix ingredients)
- 1 tablespoon apple cider vinegar
- 3/4 teaspoon dry herbs (21 Salute from Trader Joes is a good mix, or combine black pepper, oregano, basil, thyme, etc)
Variation: instead of dry herbs, add 1/2 cup diced fresh pineapple and blend together. I also enjoy it, with 2 tablespoons of almond butter – adds a bit more depth and richness.
- Place all ingredients in a bowl and whisk until blended, or place in Vitamix and blend together.
